CAROLEA: Medium fruity, grassy type, 
with hints of artichoke and aromatic herbs. Its flavor starts out sweet, with moderate-intense notes bitterness and spiciness; aftertaste of artichoke and aromatic herbs. Its color is yellow with green reflections, medium fluidity.

TONDA DI STRONGOLI: Medium fruity, green type, with hints of almond, artichoke and tomato. Its flavor is mainly sweet, with mild notes of spiciness and bitterness; aftertaste of cardoon/artichoke. Its color is green with yellow reflections, medium fluidity.

 
DOLCE DI ROSSANO: Medium-light fruity with hints of grass and sweet almond. Its flavor is mainly sweet, with mild notes of spiciness and bitterness. Its color is yellow with green reflections, medium-high fluidity.
Bruzio extra virgin olive oil DOP was first among the Calabrian extra virgin olive oil to obtain the DOP recognition by the European Union.

It  is produced in four different areas in the province of Cosenza.This oil is made from the varieties of olives Tondina, Carolea and Grossa di Cassano. 

The name "Bruzio" retraces the ancient name of the corresponding part of Calabria, with the main center Cosentia, inhabited by Bruzi, ancient Italic tribes. Storage: Should be kept away from heat sources, in and cool dry place.

The ideal temperature is between 14 ° and 20 ° C, which allows to maintain the product for 36 months. Areas of production: Fascia Prepollinica - Valle Crati - Colline Joniche - Presilane - Sibaritide

 
Aspect and Taste : 

Fascia Prepollinica: obtained from the Tondina variety (at least 50%), Grossa di Cassano (up to 20%), Carolea (up to 30%); it is green with hints of yellow, has a medium fruity aroma and fruity taste .

Valle Crati: obtained from the Carolea variety (at least 50%), Tondina (up to 30%), Rossanese (up to 20%); it has a greenish-yellow colour, a medium fruity aroma and fruity taste.

Colline Joniche Presilane: obtained from the Rossanese variety (at least 70%); it is golden yellow with hints of green, has a delicate fruity aroma and a fruity taste with a hint of sweet almond.

Sibartide: obtained from the Grossa di Cassano variety (at least 70%), Tondina (up to 30%); It has a yellow colour with some hints of green, a light, fruity aroma and a fruity taste with a light touch of bitterness.

The product is sold as Bruzio PDO extra virgin oil, with the addition of the names of production areas. 

Thanks to its delicate aroma, the Bruzio PDO extra virgin oil is particularly suitable to dress steamed vegetables, grilled fish and salads, as well as an ingredient in the pasta specialities of Calabria.

 
The Lametia PDO extra virgin oil is obtained from the Carolea variety of olive, present in the orchards in quantities of no less than 90%. 

The remaining 10% may be made up of other varieties. Considered one of the best extra virgin olive oils of Italy and the world, the extra virgin Lametia has been awarded the DOP label by the European Union in 1999. Its excellent organoleptic qualities are recognized by top national research organizations.

It is produced only in the municipalities adjacent to the Plains of St. Euphemia in the province of Catanzaro, including the towns of Curinga, Maida, San Pietro a Maida, Gizzeria, Filadelfia, Feroleto Antico, Pianopoli , Vallefiorita, Amaroni and Lamezia Terme.

The Lamezia Olive Oil Consortium supervises all phases of production. The olives must be harvested manually or by machine directly from the tree from the first ripening to 15th January of each year at the latest.

The olives should give no more than 20% of oil and the harvest should consist of no more than 13 metric tonnes per hectare of olive orchard.
Olive growing in the area of Crotone is traceable as early as 2000 BC, but is to the Byzantine era that it owes its widespread  distribution and  substantial improvement in cultivation techniques.

It is today produced in the municipalities of Castelsilano, Cerenzia,, Pallagorio, San Nicola dell'Alto Savelli and Verzino. The Extra Virgin Olive Oil Crotonese PDO is obtained from the pressing of olives belonging to the variety Carolea, Pennulara, Borgese, Leccino, Tonda di Strongoli and Rossanese.
